Pesto de noix et ses deux variations: subtilité en toute simplicité

Un post un peu différent aujourd’hui puisque j’ai envie de vous présenter un produit phare de ma cuisine ces jours-ci, un pesto de noix au basilic, que l’ont peut décliner en de multiples variations. Ce pesto est un produit bien d’ici puisqu’il est réalisé par un agriculteur vaudois établi à Oulens. Et pour la grande amatrice de noix que je suis, il est tout simplement à tomber par terre. On peut l’utiliser dans de nombreuses recettes – je vous laisse d’ailleurs y songer – , mais en voici deux que j’ai réalisées ces jours…

 

La salade de lentilles vertes et son pesto de noix

Recette pour deux personnes

Ingrédients 

  • 150g de lentilles vertes (ou un verre de 2dl de lentilles)
  • ¼ d’oignon
  • 1 carotte
  • 1cc de moutarde
  • 2-3cs de vinaigre de vin rouge
  • ½ cc de sel
  • poivre
  • 2cs d’huile de colza pressée à froid
  • 1cc d’huile de noix
  • 1cs de pesto de noix au basilic* **

Marche à suivre

  1. Rincer abondamment les lentilles. Les mettre à cuire à couvert dans deux fois leur volume d’eau. Dès les premiers signes d’ébullition, baisser le feu et laisser mijoter 25 à 30 minutes (ou se référer aux indications du paquet selon la variété). Ne pas saler (cela ralentit la cuisson…)  Les lentilles doivent être cuites certes, mais rester bien fermes.
  2. Les mettre à égoutter et refroidir dans une passoire.
  3. Parallèlement à la cuisson des lentilles, hacher le quart d’oignon très finement. Eplucher la carotte et découper la en très petits dés.
  4. Préparer la vinaigrette  dans un saladier: mélanger  énergiquement la moutarde, le vinaigre, le sel et le poivre jusqu’à l’obtention d’un mélange homogène. Ajouter ensuite les huiles et le pesto, mélanger à nouveau.
  5. Ajouter les lentilles, l’oignon et les dés de carotte à la sauce. Mélanger bien et saler encore un peu si besoin est.

*Bien évidemment que les non-lausannois ont droit à leur salade… Soyez simplement plus généreux avec l’huile de noix et la salade sera parfaite.

 Déguster cette salade avec des pommes de terre vapeur et une sauce séré aux herbes par exemple… La salade est encore meilleure le lendemain car les lentilles ont eu le temps de s’imprégner de la bonne sauce, idéal donc pour un reste boulot-uni…

 

 

 

Le croque Monsieur au pesto de noix,mmmmmh si bon !!!, qui accompagne à merveille une bonne soupe de légumes. Parfait pour un repas du soir hivernal puisque prêt en deux temps trois mouvements…

Recette pour deux personnes

Ingrédients

  • 8 tranches de pain toast complet
  • 4 tranches de jambon d’épaule fermier
  • Quelques tranches fines de gruyère
  • 4cc de pesto de noix
  • poivre
  • un peu de beurre

Marche à suivre

  1. Tartiner 4 tranches de pain toast de pesto de noix. Y déposer une tranche de jambon chacune, des tranches de gruyère, poivrer et recourvrir d’un toast.
  2. Beurrer légèrement les deux faces du croque-monsieur et mettre à dorer dans un appareil prévu à cet effet ou dans un peu de beurre dans une poêle anti-adhésive…le fromage qui fond est le signe que vous pouvez vous régaler !!!

à déguster avec une bonne soupe de légumes toute simple (carottes, pommes de terre, poireau et oignon par exemple)…
