Aujourd’hui je vous présente une de mes fiertés estivales ;)… une recette de courgette farcie qui promet une explosion de saveurs…du bonheur quoi! La farce, d’un fondant indescriptible est à s’en relever la nuit.
La recette est toute simple, pour une réussite, il faut bien sûr des produits de premier choix.
Recette pour 4 personnes
Ingrédients
- 1courgette rondini d’env. 1kg, ou l’équivalent en petites courgettes rondini, ou en 1 grosse courgette longue. Il faut bien sûr qu’elle(s) soi(en)t suffisamment épaisse(s) pour pouvoir être farcie(s).
- 2cs d’huile d’olive
- 1-2 oignons frais émincés
Farce
- 50g d’un bon parmesan (râpé par vos soins)
- 250g de ricotta
- 1-2 gousses d’ail
- 1 pointe piment d’Espelette ou paprika fort
- 10 brins de sauge ciselés.
- sel, poivre
Coulis
- 40g d’une bonne conserve de tomates concassées*
- 1cc de sucre rroux
- 1cs d’huile d’olive
- sel, poivre
Marche à suivre
- Couper le chapeau de la ou les courgettes. Vider en le cœur à l’aide d’une cuillère. (Comme sur la photo.) Attention à ne pas percer la peau. Mettre dans un plat allant au four, saler et poivrer généreusement, et verser un filet d’huile d’olive.
- Faire revenir 10min dans un peu d’huile d’olive le cœur de la courgette (haché grossièrement) et l’oignon. Après cuisson, retirer l’excédent de liquide, si il y en a.
- Mélanger tous les ingrédients de la farce. Ajouter ensuite le mélange de courgettes et d’oignons cuits.
- Farcir la courgette. Lui mettre fièrement son chapeau et enfourner 45min au four à 180°. (Selon la taille de la ou les courgettes, on peut réduire le temps de cuisson, la mienne était de 1kg!…)
- Mixer tous les ingrédients du coulis et faire chauffer à petit feu.
- Être prudent quand on découpe la courgette, il faut être très rapide pour que la farce s’en aille pas…mais suivant la forme de la courgette (une grosse ronde comme nous ce soir, c’est difficile de ne rien laisser s’échapper…pas grave on reconstitue avec une cuillères de belles parts généreusement farcies !) L’avantage quand on prend de petites courgettes rondes, on les sert individuellement et on s’évite la découpe !
- Servir une courgette par personne, ou une part seulement avec le coulis de tomate et un riz complet par exemple. Et se régaler !!
* Encore mieux, faire le coulis avec des tomates fraîches dont on aura enlevé la peau…pas le courage ce soir….
