Le riz casimir…un exotisme helvétique

Le riz casimir est un grand classique de notre mère …pour ma part c’est je crois l’un de mes (voir le) plat(s) préféré(s) de mon enfance. Et quelle surprise, quand j’ai appris en lisant l’un des derniers Cuisine de Saison que le riz casimir était en fait un classique de la cuisine helvète!

La particularité de ce curry, pour celles et ceux qui ne le connaîtraient pas, réside dans le mélange de fruits frais poêlés qui accompagne riz et émincé en sauce. Et justement, cette sauce, c’est elle qui à un détail près, fait du riz casimir un met d’exception dont on raffole ou un plat de cantine d— qu’on essaye tous en vain d’oublier. Je vous donne ma version du plat (qui n’est pas forcément la vraie) mais c’est celle qui me plaît.

 

 Recette pour deux personnes

 Ingrédients

  • 250g de blancs de poulet fermier ou bio
  • 1dl de vin blanc
  • 1dl de bouillon de légumes corsé
  • 1dl de lait
  • 1dl de demi-crème
  • 1½ cs de farine
  • 1cs d’un bon curry madras

Accompagnement de fruits

  • 1 moitié d’ananas frais, pelé, tranché puis coupé en morceaux
  • 1 à 2 pommes pelée(s), coupée(s) en morceaux
  • 1 banane coupée en rondelles
  • 1 kiwi coupé en morceaux
  • 1 cuillérée de beurre
  • 2-3cs d’amandes effilées dorées

 Marche à suivre

  1. Couper les blancs de poulet en morceaux (rendent moins de jus que si achetés précoupés)
  2. Faire dorer les amandes dans une poêle sans matière grasse. Réserver.
  3. Faire chauffer un peu d’huile d’olive dans la poêle et y saisir le poulet par portions 2-3 minutes jusqu’à une belle coloration dorée. Sortir le poulet de la poêle, assaisonner le de sel, poivre, une pointe de curry, couvrir et réserver.
  4. Mettre le bouillon et le vin blanc dans la même poêle et porter à ébullition.
  5. Mélanger au fouet lait, crème, farine et curry. Ajouter ce mélange à la poêle quand bouillon et vin ont réduit de moitié tout en remuant bien. Faire porter à ébullition en remuant constamment et quand le sauce a pris (épaissi), baisser le feu, remettre le poulet dans la sauce, couvrir et laisser mijoter à petit feu 5-10 min.
  6. Pendant ce temps, faites revenir les morceaux d’ananas et de pommes dans une poêle dans un peu de beurre 4-5min. Retirer de la poêle et tenir au chaud. Faire dorer les rondelles de bananes 1-2 min, ajouter le kiwi au dernier moment, juste pour qu’il soit chaud. Réserver.
  7. Dresser une couronne de riz (long grain-basmati) sur un plat bien préchauffé, y ajouter l’émincé en sauce au centre, les fruits et parsemer de quelques amandes effilées, grillées. Servir aussitôt sur des assiettes préchauffées.
