Marre de la traditionnelle soupe aux légumes ? Voici une recette qui viendra ravir vos papilles. La douceur de la carotte associée au parfum relevé du gingembre et de l’orange donne un mélange absolument délicieux…à tester au plus vite.

Cette soupe peut aussi bien être servie en plat principal un soir de semaine qu’en entrée branchée (je l’imagine alors servie avec un nuage de crème fouettée et parsemée d’herbes fraîches). Alors, elle vous tente ?

Recette pour 4 personnes

Ingrédients

  • 600g de carottes
  • 150g de pommes de terre
  • 1-2 oignon(s)
  • 1cs de gingembre frais râpé
  • 1 orange bio (moitié du zeste et jus de l’orange entière)
  • 1,2l de bouillon de légumes bien corsé
  • ½ cc de sel, poivre
  • 1-2cs d’huile d’olive
  • 3cs de crème soja ou demi-crème

Marche à suivre

  1. Couper les carottes en grosses rondelles, la pomme de terre en morceaux. Hacher finement l’oignon. Éplucher le gingembre et râper-le à l’aide d’une petite râpe à grille fine. (Il faut une cuillère à soupe bien bombée).
  2. Faire revenir 2-3 min l’oignon dans une grande casserole dans une cuillérée d’huile d’olive. Ajouter ensuite le gingembre, faire revenir encore une minute.
  3. Ajouter le restant d’huile et les légumes, faire revenir 1-2min.
  4. Mouiller avec le bouillon, ajouter le zeste d’orange, le sel, couvrir et laisser cuire 40min.
  5. 10 min avant la fin de la cuisson, ajouter le jus de l’orange.
  6. À la toute fin, mixer finement la soupe, ajouter la crème, poivrer et servir bien chaud.
