Pasta aux champignons et jambon cru sauce safran : attention, plat hautement addictif !!

Pas besoin de m’éterniser sur cette recette ni de la présenter véritablement car cette sauce figure assez fréquemment sur les cartes des restos italiens…Ma attenzione, ici pas de sale goût de cochon (pardonnez-moi l’expression mais j’ai fait plusieurs fois l’expérience du jambon cru qui avait le goût de porcherie dans les restos et depuis je suis devenue méfiante et sceptique !)

Les champis, j’adoore, le bon jambon cru, j’adooore, le safran j’en raffole : le tout donne une sauce savoureuse et onctueuse dont on peut difficilement se défaire !

Recette pour 3 personnes

Ingrédients

  • 250g de champignons de paris
  • 100g d’un bon jambon cru* (tranches pas trop fines)
  • 1cs d’huile d’olive
  • 1dl de bouillon de légumes corsé chaud
  • ½ gousse d’ail (selon taille)
  • 1dl de vin blanc
  • 1½ cc de maïzena
  • 1.5 dl de lait
  • 1dl de demi-crème
  • quelques pistils de safran
  • sel, poivre
  • persil frais ciselé**

Marche à suivre

  1. Laver les champignons sous un mince filet d’eau, les éponger puis les couper en tranches. Couper le jambon cru en morceaux de taille moyenne.
  2. Chauffer le bouillon de légumes, y mettre la gousse d’ail pressée à infuser.
  3. Faire chauffer l’huile dans une poêle anti-adhésive et y mettre à cuire les champignons à feu assez vif (ils doivent dorer légèrement sans trop s’assécher quand même). Après 10min, ajouter le jambon cru et le saisir 1-2min. Ensuite, retirer le tout et réserver.
  4. Déglacer la poêle avec le vin banc, ajouter le bouillon (que vous passerez dans une fine passoire) et laisser réduire de moitié.
  5. Préparer le mélange por la sauce dans un récipient à part : fouetter énergiquement le lait, la crème et la maïzena. Ajouter le mélange au liquide de la poêle et faire chauffer le tout en mélangeant bien. Une fois que la sauce a pris, baisser le feu, ajouter le safran, les champignons et le jambon, un peu de persil ciselé, poivrer (et saler si nécessaire). Laisser revenir encore 1-2 min et servir avec des pâtes (tagliatelle, parpadelle, penne…et tutti quanti !) Et MIAM !

*J’ai testé une fois la recette avec le jambon de campagne fumé ,,naturaplan’’ (un poil moins cher que le cru…) et c’était très bon.

** Je n’en avais pas cette fois sous la main…mais ça donne une petite touche verte et sympa!
