Voilà des mois que je souhaite vous présenter cette belle recette, dénichée un dimanche pluvieux et tranquille à la montagne… J’étais affalée sur le canapé en train de regarder les yeux mi-clos une émission de cuisine animée par Cyril Lignac (Chef, la recette je crois) quand soudain la présentation de cette recette me sortit de mon coma. « Elle en rajoute ! », pensez-vous, un peu, mais pas tant que ça… J’étais sure qu’elle me plairait celle là (puisque j’adooore l’association pruneaux-lard, que j’adore la sauce moutarde et que j’adore ce genre de plat mijoté qui sent bon le terroir), alors j’ai soigneusement noté les ingrédients de base au fond de ma tête et depuis elle est devenue un de mes classiques : idéal pour un repas à 4 ou à 6, c’est le genre de plat délicat qui fait « cuisiné » sans compliquer trop la tâche du cuisinier. Nombreux sont ceux qui m’ont demandé la recette (amie et famille), la voilà donc officiellement, plus besoin de la donner officieusement le samedi à 18h le sèche-cheveux dans une main, le mascara dans l’autre et mon natel posé sur le meuble de la salle de bain avec la fonction haut-parleur activée. Un dessin?
Recette pour 4 personnes
Ingrédients
Matériel : ficelle de cuisine, idéalement une cocotte*
Filet mignon
- 700g de filet mignon (ici un filet et demi)
- 5 tranches de lard
- 12 pruneaux séchés dénoyautés coupés en 2
- filet d’huile d’olive
- feur de sel, poivre
- 400g de carottes
- 2 oignons (ou 1 gros)
- 1 bouquet garni( thym, sauge, marjolaine etc)
- 1.5dl de bouillon de légumes chaud
- 1.5dl de vin blanc
- 2cs de moutarde à l’ancienne
- 1dl de demi-crème ou crème soja
Purée pommes de terre-céleri
- env. 300g de céleri
- env. 700g de pommes de terre farineuse
- env. 1.5 dl de lait bouillant
- noisette de beurre
- muscade, sel, poivre
Marche à suivre
- Incisez les filets sur toute la longueur, à la moitié de leur hauteur, sans traverser la viande. Ouvrir les filets en portefeuille. Arroser d’un léger filet d’huile, saler, poivrer.
- Couper les tranches de lard en 2, et disposer les à l’intérieur des filets sur toute la longueur, contre le pli. Recouvrir de pruneaux. Refermer les filets mignons et reconstituer leur forme. Ficeler-les en faisant des nœuds à distance régulière (si besoin aidez-vous d’une autre paire de main qui tiendra le filet bien fermé).
- Préparer vos légumes et le bouquet garni : couper les carottes en rondelles, hacher l’oignon. Réserver dans deux récipients distincts. Ficeler les herbes fraîches.
- Préparer vos légumes pour la purée : éplucher les pommes de terre et le céleri, couper-les en cubes. Mettre à cuire dans 1l d’eau bouillante salée env. 20min à feu moyen. Égoutter, passer au moulin à légumes (pas au mixeur)**. Ajouter peu à peu le lait bouillant et le beurre tout en remuant sans cesse à la spatule. Saler, poivrer. Remettre la casserole sur la plaque encore chaude (mais éteinte), couvrir et laisser au chaud.
- Pendant que les légumes cuisent, faire dorer à feu vif la viande sur toutes ses faces dans une grande poêle dans un peu d’huile d’olive (1-2min en tout). Réserver.
- Dans la cocotte, faire revenir les oignons 2-3min dans une peu d’huile d’olive. Ajouter les filets, le bouquet garni et les carottes. Mouiller avec le vin blanc et le bouillon, porter à ébullition puis laisser mijoter à feu doux à couvert pendant 15 à 20min (selon épaisseur des filets). À mi-cuisson, retourner vos filets.
- À la fin de la cuisson, ôter vos filets et réserver au chaud. Ôter le bouquet garni et le jeter. Enlever si besoin un peu de jus de cuisson (mais il doit en rester!!!!), ajouter la moutarde et la crème, laisser réduire 3-4min. Pendant ce temps, découper les filets en jolies tranches régulières.
- Servir les tranches de filets (que vous aurez parsemées d’un peu de fleur de sel et de poivre) accompagnées de purée et de carottes, napper de sauce.
*Avant d’en avoir une en vacances chez moi (merci Anaïs !), quand je n’empruntais pas celle du copain de ma colloc, je remplaçais la cocotte par une grosse casserole classique avec couvercle qui ferme bien.
** Variante sans moulin à légumes, pour obtenir une belle consistance : Egoutter les légumes, remettre en casserole et réduire en purée au batteur électrique, tout en incorporant peu à peu le lait bouillant et le beurre.
