Cannellonis d’aubergine à la sauge.. la cuisine des vacances!

Après quelques petites semaines d’absence sur notre blog, due à des vacances pour l’une et à une nouvelle organisation familiale pour l’autre, voici une recette idéale pour ces jours de canicule que j’ai héritée de… Ségo! Il faut dire qu’à une certaine période elle écumait tous les magazines de cuisine et qu’elle me dévoilait ensuite ses découvertes qui sont devenues nos classiques. Je vous dévoile donc ce must familial, une valeur sûre, que nous refaisons chaque année depuis déjà une petite décennie!

Recette pour 4 personnes en entrée

Ingrédients

  • 2 grosses aubergines
  • 250g de broccio (fromage frais de brebis corse) ou ricotta
  • 100g de gruyère râpé ou parmesan
  • 8 feuilles de sauge ciselée
  • une pointe de couteau de piment d’Espelette en poudre ou paprika fort
  • 2 gousses d’ail pressées
  • 250g de tomates fraîches pelées (en boîte si vous n’avez pas le courage de les peler vous même)
  • huile d’olive, sel et poivre

Marche à suivre

  1. Préchauffer le four à 200°C.
  2. Laisser reposer les aubergines finement coupées en tranches (de 5mm env.) dans la longueur avec du sel et recouvertes d’un linge.
  3. Recouvrir la plaque du four de papier sulfurisé et le huiler au pinceau.
  4. Eponger les aubergines avec du papier absorbant, les ranger côte à côte, puis les huiler au pinceau. Les faire cuire 10 min au four.
  5. Verser les tomates et leur jus dans le bol d’un mixeur, saler et poivrer. Ajouter une cuillérée d’huile d’olive. Donner quelques impulsions et éventuellement sucrer si le mélange est trop acide. Garder au frais.
  6. Préparer la farce: mélanger le broccio/ricotta, la sauge, le piment, l’ail, le gruyère, saler, poivrer.
  7. A l’aide d’une cuillère, déposerr de la farce à l’extrémité de chaque tranche d’aubergine, puis les rouler et les disposer dans un plat à gratin huilé. Mettre au four pendant 10 min.
  8. Servir chaud*, accompagné du coulis de tomate. Et d’un bon petit verre de rosé frais!

*Les cannellonis se mangent également tièdes voire froides et sont donc idéales pour un buffet froid d’été…

      @Annick: oui, c’est le côté délicat de la recette, il faut trancher très finement (5mm) l’aubergine. Le plus facile, c’est de se munir d’un grand couteau bien aiguisé, de couper en 2 l’aubergine dans la longueur et de travailler ensuite avec la moitié d’aubergine côté coupé sur la planche. (une vidéo ne serait pas de trop!!) C’est ainsi qu’on est le plus précis. Les chanceux pourront les trancher à l’aide d’une machine à découper le jambon/pain! bec
