Fenouil gratiné façon crumble

Ah l’été, le lac, l’Aare, les terrasses, les marches en forêt, le farniente, que de choses pour nous distraire ! Et la chaleur m’incite à peu cuisiner et à vivre d’amour et d’eau fraîche. Ou plutôt, à me contenter de petits plats légers et frais qui demandent peu de temps de préparation. Ce gratin est un peu une exception dans ma cuisine ces jours, mais je tiens à vous donner la recette car elle nous a séduits. Simple, estivale, peu compliquée…c’est le genre de recette* que j’aime noter dans mon cahier, histoire de ne pas l’oublier.

Recette** pour 2 personnes

Ingrédients

  • 2 beaux fenouils
  • 1cs + 1cc d’huile d’olive
  • 1 oignon haché
  • 2 gousses d’ail pilées
  • 2 brins de romarins
  • 300g de tomates concassées
  • 3cs d’eau
  • 2 cs de sirop d’érable
  • sel, poivre
  • quelques filaments de safran
  • 3cs de chapelure
  • 2cs de parmesan râpé

Marche à suivre

  1. Ôter la base des fenouils et couper-les dans la longueur en tranches de 5mm. Faire sauter le fenouil 4 min dans une cuillère à soupe d’huile d’olive dans une poêle. Ôter de la poêle et réserver.
  2. Faire suer l’oignon dans une petite cuillérée d’huile 2min. Ajouter ensuite l’ail pilé, les brins de romarins, baisser le feu et laisser suer encore 2 min.
  3. Ajouter les tomates, l’eau, le sirop, les filaments de safran, saler, poivrer généreusement et laisser mijoter 3min.
  4. Pendant ce tems, mélanger dans un bol la chapelure et le parmesan.
  5. Verser la moitié de la sauce dans un plat à gratin, disposer les tranches de fenouil, verser ensuite le reste de sauce tomate. Verser le mélange de chapelure et de parmesan. Arroser d’un filet d’huile d’olive.
  6. Enfourner au milieu d’un four préchauffé à 200° env. 25min. Servir avec p. ex du riz (complet), de la polenta, des pommes de terre vapeur, des blancs de poulet bardés de jambon cru…. et bon app’ !

*Il faut aussi préciser qu’elle met en valeur le fenouil, un légume qui n’enthousiasme pas les foules.
