Testée, re -testée, rere-testée chaque année par ma belle-mère, ces losanges à l’anis sont juste divins ! N’étant pourtant pas très fan d’anis, ces biscuits à la fois croquants et fondants m’ont tout de suite plu ! À cela, ajouter que la pâte est prête en quelques minutes et qu’il sont plutôt fit (pas 1 trace de beurre), plus rien ne peut vous retenir d’y goûter !!
Recette pour 60 à 70 pièces env.*
Ingrédients
- 3 œufs
- 300g de sucre cristallisé ou de sucre glace
- 200g d’amandes entières non mondées
- 150g de raisins sultans
- 2cs d’anis légèrement écrasé**
- 300g de farine
Marche à suivre
- Battre les œufs en mousse ave le sucre jusqu’à que le mélange blanchisse.
- Ajouter tous les autres ingrédients et bien mélanger pour obtenir une boule de pâte homogène.
- Étaler la pâte en forme de rectangle à env. 1 cm d’épaisseur sur l’envers d’une plaque*** couverte de papier sulfurisé, en passant plusieurs fois la spatule sous l’eau.
- Enfourner 20 à 30min au milieu du four préchauffé à 160°.
- Découper la pâte encore chaude en petits losanges et laisser refroidir.
- Garder dans une boîte à biscuits.
* Sur la photo, il y a 2 plaques de biscuits, soit 2 fois la quantité indiquée ci-dessus.
**Vous pouvez légèrement l’écraser à l’aide d’un rouleau à pâtisserie, il dégagera davantage d’arôme.
