Salade tiède de petits pois à la menthe…

J’ai goûté plusieurs fois des soupes glacées de petits pois à la menthe…mariage subtil et frais. J’avais envie de pois entiers cette fois-ci, ce qui m’a amenée à réaliser cette salade tiède simple et délicieuse. A servir en été avec un poisson ou une viande grillée. Quelques ingrédients dans son panier, 2 autres mains pour écosser les pois tout en papotant (si possible dehors au soleil) et hop le tour est joué. On a beaucoup aimé (l’écossage, chez moi il fait effet vacances) et surtout la salade, un régal ! Pourquoi ne pas remplacer les petits pois en cosse par des pois surgelés ou en boîte ? Car la différence de goût est nette… allez un peu de courage.

Accompagnement pour 2 personnes

Ingrédients

  • 1kg de petits pois en cosse
  • 0.8 dl d’eau
  • 1 oignon frais
  • 5 tiges de feuilles de menthe
  • 2/3 cc de fleur de sel
  • poivre
  • 1cs d’un bon balsamique*
  • 1cs + 1cs d’huile d’olive

Marche à suivre

  1. Ecosser les pois.
  2. Mettre 1 cs d’huile d’olive à chauffer dans une casserole. Ajouter les petits pois et faire revenir 1 min. Mouiller avec l’eau, laisser cuire à feu doux et à couvert pendant 12-15min. Laisser tiédir, si possible dans un pot distinct (ça va plus vite).
  3. Pendant que les pois cuisent, émincer l’oignon en rondelles très fines. Ciseler les feuilles de menthe.
  4. Mélanger le balsamique et l’huile d’olive dans un petit saladier. Ajouter les pois, les oignons et la menthe. Saler avec la fleur de sel, poivrer, bien mélanger et c’est prêt !

*Un vrai balsamique doit « subir un vieillissement en fûts d’au moins douze ans et souvent jusqu’à vingt-cinq ans. Le vinaigre balsamique que l’on trouve dans le commerce est en général âgé de 3 à 5 ans et possède quand même un arôme puissant, mais avec une acidité très marquée. » (source http://fr.wikipedia.org/wiki/Vinaigre_balsamique).
