Comme promis, voici la recette de l’un des éléments importants d’un buffet de mezze: le baba-ghannouj ou caviar d’aubergine. En plus d’être délicieuse, cette préparation met en valeur LE légume du mois d’août! Profitons!

Recette pour remplir un grand bol

Ingrédients

  • 3 aubergines
  • 1/2 jus de citron bio
  • 1 cc de vinaigre de vin blanc
  • 1 petit oignon finement haché
  • 2 gousses d’ail pressées
  • 3 cs à soupe d’huile d’olive
  • 1 tombée de demi-crème
  • sel et poivre

Marche à suivre

  1. Préchauffer le four à 220°C. Piquer les aubergines à la fourchette, les badigeonner d’huile d’olive à l’aide d’un pinceau et les disposer sur une plaque à gâteau chemisée de papier sulfurisé.
  2. Cuire environ 20 min. au milieu du four. Les laisser refroidir, les couper en deux, les peler (en principe la peau devrait s’enlever très facilement en tirant depuis le sommet) et les couper en morceaux.
  3. Réduire les aubergines en purée avec le jus de citron, le vinaigre, l’oignon, l’huile et l’ail à l’aide d’un mixer.
  4. Assaisonner d’un peu de sel, poivre, crème et selon les goûts d’un peu de persil plat haché.
  5. Servir avec d’autres mezze et du pain libanais.
