Je me souvenais du goût comme on se souvient des plus belles choses… C’est donc avec délicatesse que je l’ai réalisée à mon tour pour mes deux amours. Mmm… de doux et onctueux souvenirs me sont revenus… Une recette différente pour profiter au mieux des 2 vedettes automnales que sont la courge et la châtaigne! Spéciale dédicace à notre chère Maman…

Velouté

Recette pour 4 personnes

Ingrédients pour la soupe

  • 1 petit potimarron (200 g)
  • 200 g de châtaignes fraîches décortiquées (les surgelées se prêtent très bien)
  • 3 dl de bouillon de légumes ou de volaille à volonté
  • 1 dl de cognac ou Noilly Prat (en fonction des goûts)
  • 20 g de beurre
  • 1 oignon
  • 0.5 dl de demi-crème
  • curry, sel et poivre
Pralins de noix
  • 20 g de noix de cajou décortiquées
  • 1 cc de sucre brut
  • curry en poudre
  • 2 pincées de sel
  • 1/2 cc d’huile de noix

Marche à suivre

  1. Tailler la courge en dés de 2-3 cm sans l’éplucher.
  2. Faire revenir dans une casserole la moitié de l’oignon émincé dans 10 g de beurre. Ajouter les morceaux de potimarron et saupoudrer de curry. Laisser rissoler un moment. Mouiller avec 0.5 dl de cognac ou Noilly Prat. Laisser cuire à couvert jusqu’à tendreté.
  3. Dans une autre casserole, faire suer le reste de l’oignon avec les châtaignes et 10 g de beurre. Mouiller avec 0.5 dl de cognac ou Noilly Prat et dl de bouillon. Laisser mijoter à couvert jusqu’à tendreté.
  4. Pour le pralin, hacher grossièrement les noix de cajou et les faire griller dans une poêle. Ajouter le sucre et le curry, laisser caraméliser. Saler, ajouter l’huile et bien mélanger.
  5. Mixer séparément les deux soupes. Allonger avec un peu de bouillon si nécessaire. Saler et poivrer bien relevé.
  6. Verser simultanément les deux soupes dans des bols chauds. Garnir de crème et de pralins, saupoudrer de curry et… SAVOURER aussitôt!
