Risotto aux bolets: simple et classe

Je vous livre ce soir une recette de risotto que je fais depuis des années, que je trouve toujours aussi savoureuse et que j’aime préparer pour un repas entre amis. 25 minutes de préparation, quelques copeaux de parmesan, une petite garniture folle, 2-3 brins de rucola, le tout délicatement arrosé de crème de balsamique et hop vos amis seront au ciel ( et vous aussi!), car la recette ”en jette”!!! Mais attention petit dicton important: ce sont les invités qui attendent le risotto et pas le contraire! Un risotto qui a trainé une heure en casserole n’est plus ce qu’il était…. Donc conseil, préparez tous les ingrédients à l’avance, faites les patienter dans des petits pots distincts, allez prendre l’apéro et faites cuire le risotto une fois que tout le monde est là. Les invités seront contents d’avoir la recette ;)

Recette pour 4 personnes

Ingrédients

  • 2 verres de riz à risotto Carnaroli ou Arborio
  • 1 oignon
  • 1 petit paquet de bolets séchés
  • 1 dl de vin blanc
  • 0,7 à 1 litre de bouillon de légumes bien corsé
  • env. 60g de parmesan (entier, sinon pas de copeaux…)
  • 1 poignée de pignons
  • quelques brins de rucola*
  • 1dl de crème entière
  • 2cs d’huile d’olive
  • sel, poivre
  • crème de balsamique
  • en été: une douzaine de tomates cerises
Marche à suivre
  1. Rincer les bolets pour éliminer tous cailloux suspects puis les faire tremper dans 2-3 dl d’eau tiède pendant 20 minutes.
  2. Hacher l’oignon.
  3. Préparer le bouillon de légumes auquel on ajoute un peu du liquide de trempage des bolets, il doit être bien chaud.
  4. Fouetter la crème et la garder au frais.
  5. Faire une douzaine de copeaux de parmesan et les réserver avec la rucola. Râper le reste du fromage.
  6. Faire revenir doucement l’oignon dans une casserole dans un peu d’huile 2-3 minutes, y ajouter 2/3 des bolets égouttés, puis le riz et remuer jusqu’à que celui-ci devienne translucide.
  7. Verser le vin blanc et dès sa totale absorption, commencer à mouiller le risotto avec le bouillon. Ajouter petit à petit des louchées de bouillon en remuant constamment et ceci pendant 20 min env.
  8. Ce faisant, faire revenir dans un peu d’huile les bolets restants, les pignons ( et les tomates entières pour la version estivale) quelques minutes, jusqu’à une belle coloration dorée. Saupoudrer de fleur de sel, poivrer légèrement, réserver.
  9. Lorsque le riz est est al-dente (encore légèrement croquant à l’intérieur) ou bien cuit pour ceux qui préfèrent, verser une dernière louchée de bouillon, ajouter le parmesan râpé, une pointe de sel, du poivre, remuer légèrement et laisser reposer hors feu 2minutes. (Il se peut qu’il vous reste du bouillon, peu importe, la quantité de liquide est inexacte, cela dépend de la consistance que vous souhaiter donner à votre risotto.)
  10. Servir le risotto dans une assiette creuse (si possible préchauffée), parsemer le riz de quelques bolets, pignons (et tomates). Décorer d’une bonne cuillérée de crème fouettée, de rucola et de quelques copeaux de parmesan. Arroser d’un peu de crème de balsamique.
  11. Déguster sans attendre!
