Recettes pour 10 verrines

Ingrédients

  • 600 g de chanterelles d’automne soigneusement lavées
  • 10 noix de St-Jacques sans corail
  • 1 dl de cognac
  • 1 cs de beurre salé
  • quelques pincées de fleurs séchées bio*
  • Fleur de sel et poivre du moulin

Marche à suivre

  1. Dans une poêle enduite d’huile d’olive, étuver les chanterelles env. 5 minutes. Déglacer ensuite au cognac, poivrer généreusement et réserver au chaud.
  2. Dans une autre poêle, faire dorer env. 1 min. de chaque côté les noix de St-Jacques dans le beurre. Ajouter quelques pincées de fleur de sel.
  3. Dresser les verrines en commencant par un fond de chanterelles sur lequel vous déposez une noix de St-Jacques. Décorer en parsemant d’une petite pincée de fleurs multicolores. Servir aussitôt avec un vin blanc sec bien fruité.
