Saucisse à rôtir et compote de pommes!

Après quelque temps d’absence, me revoilà sur les ondes, avec une idée de repas toute simple mais oh combien délicieuse! Elle est tirée de notre répertoire familial et fait donc directement écho à notre enfance à la campagne… A l’époque, il nous suffisait de cueillir quelques pommes dans le jardin… et hop, le tour était joué! N’hésitez pas à faire de la compote en grande quantité car le lendemain matin mélangée à la crème Budwig, c’est le bonheur assuré pour toute la journée!

Recette pour 2 personnes

 

Ingrédients

  • 6 belles pommes à cuire (Boscop par exemple)
  • 1 grosse saucisse à rôtir en boucle *

Marche à suivre

  1. Eplucher et vider les pommes, puis les couper en gros dés. Mettre un fond d’eau dans une casserole et laisser cuire à feu moyen et à couvert une dizaine de minutes en remuant de temps en temps. Ecraser à l’aide d’un ustensile pour obtenir une compote.
  2. Faire quelques trous sur la saucisse à l’aide d’une fourchette. Dans une poêle, la faire cuire à feu moyen une vintaine de minutes, jusqu’à ce que le coeur ne soit plus rose.
  3. Dresser la compote de pomme et la saucisse sur une assiette et ajouter sur le tout un peu de “gras de cuisson” pris dans la poêle. Régalez-vous!

Surtout ne rien ajouter ni aux pommes ni à la saucisse! Plus simple est leur cuisson, meilleur est leur goût!

* Pour les Lausannois, la meilleure saucisse, à mon avis, s’achète au marché de la Riponne au stand de la boucherie Bühlmann là où il y a une petite marche pour pouvoir encore mieux guigner l’étalage. On a le choix entre la saucisse à la marjolaine, au romarin ou nature. Toutes sont délicieuses… Sinon, celle de la boucherie de Montelly, juste à côté du café qui porte le même nom, vaut elle aussi le détour. En plus, les patrons sont fort sympathiques.
