Je sais, vous allez m’en vouloir de revenir encore une fois avec mes légumes d’hiver mais que voulez-vous, par cette sacrée cramine* qu’il fait ces jours, j’ai envie de plats chauds mijotés… et puis de toute façon, je n’ai vu encore aucun légume de printemps sur les étals…et tac, me voilà excusée !!

Revenons à notre riz complet : Des amies me demandent souvent que faire avec du riz complet, ingrédient qu’elles ont acheté par bonne conscience et qui menace de finir fade après cuisson… Et bien les amis, non le riz complet n’est pas fade, ni ennuyeux…au contraire, j’aime son goût de noisette et sa fermeté sous la dent. Il suffit de bien l’accommoder. Aujourd’hui, je vous propose de le déguster mijoté avec de bons petits légumes dans du vin blanc et un bouillon persillé, le tout sagement couronné d’un œuf poché coulant à souhait et promettant onctuosité…  Promis, cuisiné ainsi on redemande du Riz Complet !!

Recette pour 2 personnes

Ingrédients

  • 1cs d’huile d’olive
  • 1 ou seulement ½ oignon (selon la taille)
  • 350g de légumes (blanc de poireau, carotte, champignons)
  • 250g de riz complet
  • 1dl de vin blanc
  • 4dl de bouillon de légumes
  • ¼ cc de sel
  • ½ curcuma
  • poivre
  • poignée de persil
  • 2cs de crème (soja ou vache)

 

  • 2 œufs harchi frais
  • 1dl de vinaigre

 

Marche à suivre

  1. Hacher l’oignon et le faire revenir dans l’huile d’olive dans une casserole.
  2. Couper tous les légumes en morceaux de taille moyenne.
  3. Ajouter le riz complet et les légumes à l’oignon, faire revenir une minute, puis ajouter le vin blanc. Quand le vin est absorbé, ajouter le bouillon, couvrir et laisser mijoter 30 à 40min (selon les indications sur l’emballage).
  4. Peu avant la fin de la cuisson du riz, mettre une casserole avec de l’eau et 1dl de vinaigre à chauffer.
  5. Casser chaque œuf séparément dans une tasse et les faire glisser 1à1 dans l’eau frémissante. Pocher 3min30 au seuil de l’ébullition,sortir avec une écumoire et égoutter.
  6. Ajouter sel, poivre, curcuma, crème et persil haché au riz. Bien mélanger, ajuster l’assaisonnement en cas de besoin.
  7. Servir une bonne portion de riz par personne, y déposer un oeuf poché, saupoudrer de fleur de sel et percer le jaune… Régalez vous !
