En ces jours pluvieux, j’avais envie d’un peu de réconfort…Quoi de mieux qu’un plat qui m’évoque mon enfance ? Ce hachis Parmentier est une des nombreuses recettes que notre maman nous faisait et fait encore aujourd’hui pour le plus grand plaisir de ses petits-enfants. Je me souviens encore du moment où elle posait sur la table le gratin doré à souhait crépitant encore…mmh j’en salive. Eh bien, ce classique à encore tout pour me séduire : c’est bon, ça change et ça ,,camoufle’’ bien les légumes d’hiver qu’on aimerait bientôt oublier. Courage, on est en février !!! Dans deux mois c’est le printemps…

 

Recette pour 4 personnes

Ingrédients

Purée

  • 800g de pommes de terre pour purée
  • 2dl de lait
  • noix de muscade
  • sel, poivre

Mélange (viande et légumes)

  • 1 carotte
  • 150g de céleri
  • 150g de poireau
  • 1 oignon
  • 1-2 gousse(s) d’ail
  • 300g de viande de bœuf hachée (ou reste de pot-au-feu)
  • quelques brins de thym
  • 1cc d’épices (curcuma, paprika, muscade)
  • 1cs d’huile d’olive
  • 1dl de vin blanc
  • 1dl de bouillon de légumes corsé
  • sel, poivre

Pour gratiner :

  • 60g de gruyère râpé

 

Marche à suivre

  1. Éplucher les pommes de terre, les couper en quatre et les mettre à cuire 15 à 20 min à feu moyen dans une eau salée déjà bouillante.
  2. Pendant ce temps, émincer l’oignon et l’ail et les faire revenir dans une poêle légèrement huilée. Ajouter les légumes (préalablement découpés en dés) et laisser cuire 10min. Placer le tout dans un récipient distinct.
  3. Faire revenir la viande 2-3 min à feu vif dans la même poêle, puis y remettre les légumes, le thym, les épices, le vin, le bouillon et laisser mijoter encore 10min.
  4. Quand les pommes de terre sont tendres, placer les dans une passoire, vider l’eau de cuisson. Mettre le lait à chauffer dans la casserole vide avec le sel, le poivre et la noix de muscade. Passer les pommes de terre au presse-purée et mélanger avec le lait. (Ajouter si besoin est un peu de lait…)
  5. Déposer le mélange de légumes et de viande dans un plat à gratin (env. 35x23cm). Étaler ensuite la purée en une belle couche homogène. Parsemer de gruyère.
  6. Enfourner le tout 15 à 20 min dans un four préchauffé à 220°.
  7. Bon appétit !

Pour un repas complet, vous pouvez déguster ce gratin avec une salade d’endives par exemple…
